Healthy Crapes with soft cheese and fruits filling

Healthy Crapes at Eden Cafe Bali

You can make the crapes ahead, either once a week, or even the night before.

You can freeze them and then use them during the week as a quick healthy breakfasts for you and your kids.

Or weep a beautiful dessert when friends are coming over.

It’s a light naturally sweet healthy recipe.

For 16 basic crapes -

Ingredients -

1 1/2 cup of milk (any kind)

2 organic free range eggs

3 tbspoons of plant based oil

1 cup of flour

(whole wheat or gluten free)

A pinch of salt

Method -

Mix in a bowl the milk, eggs and oil. mix well.

place the mixture in a food processor and slowly, while mixing, add the flower and the salt.

blend until smooth.

Spray a thin layer of a plant based oil on a large pan (once you did it in the beginning you don't need to grease it again).

When the pan is really hot, add 3-4 tbspoon from the batter. Lift and move the pan, so the batter covers the whole pan surface.

After 2-3 minutes, when the lower side is golden, use a spatula to flip it to the other side. Cook for 2-3 minutes more, until golden.

Repeat on all crapes.

Cheese and fruits fillings for 16 crapes -

Ingredients -

1 cup soft fruits

2 tbspoons date honey

250g soft cheese 5% fat

1 teaspoon of lemon zest

1 teaspoon vanilla

2 tbspoons oat bran

Method -

Mash the fruits and set aside.

In a large bowl, mix the cheese, date honey, lemon zest and vanilla.

Add the fruits to the mixture and mix well.

Add the oat barn to the mixture and mix well.

Place in the fridge for 15 minutes.

Before serving, spread 1 tbspoon (loaded) of the filling on each crape, and roll the crape up.
