Traditionally, I have to take you back to Switzerland on 1900, When a swiss physician Maximilian Bircher-Benner had to find a solution to nourish his hospital patients who had a special diet, based mostly on fruits and vegetables.

The original bircher was soaked in water and lemon juice overnight, and served with yogurt.

Since then, the swiss started adopting the Bircher Muesli to their daily diet. They used to soak the oats in fresh apple-juice, lemon-juice and milk, in the morning they add yogurt, grated apple, cinnamon, fresh/dried fruits and nuts.

The new thing about Overnight oats, is that you can mix and match liquids and spices to your own taste (Such as Chai, Matcha or Coffee overnight oats)

And to have some verity as well, if you eat it most days of the week.

This new brother of the Bircher Muesli, The Overnight Oats, is a winner for a 5-10 minutes make ahead effort, and 5 minutes perfect finishing in the morning.

For a great filling breakfast with all the nutrition you need to boost your day.

It’s also perfect to put in a jar and take to work or school.

For 2 medium size oats, or 4 little ones if you have a small appetite in the morning.

Ingredients -

for the base-

1 cup rolled oats (make sure if gluten free if needed)

1 cup of milk (or any plant based substitute milk)

1 tbspoon chia seeds (optional, very recommended!)

1/2 cup of sliced fresh fruits

Choose your Style-

Aromatic:

1 teaspoon of cinnamon (or any other spice you like) +

1/2 teaspoon of real vanilla +

2 teaspoons of your favourite healthy sweetener - honey/ setivia/ agave/ dates (optional)

Carrot Cake:

1/4 cup grated carrot +

2 tbspoons of nuts +

1/4 teaspoon cinnamon

Wild Berries and lemon:

1/2 fresh or frozen berries +

1 tbspoon of natural berries jam +

1 teaspoon lemon zest +1/4 teaspoon vanilla

Strawberry Choc:

1/4 cup sliced strawberries +

1 tbspoon of 100% raw cacao powder +

1 teaspoon of honey

Apple strudel:

1/2 cup natural apple sauce +

2 tbspoons crushed nuts +

1 teaspoon real nut spread +

1 teaspoon of honey

Pina colada:

1/4 cup of diced pineapple +

1 tbspoon of sliced almonds +

1 tbspoon of coconut shreds +

1 teaspoon of honey

Toppings -

a handful of -

nuts, dried fruits, coconut shreds, pepitas, fresh sliced fruits

Special tools needed -

A jar with a lid.

Method -

In a bowl mix all the ingredients together, except the toppings ingredients.

Mix well and transfer to a jar.

let sit overnight in the fridge (or at least 4 hours).

In the morning, you can transfer it into a bowl, or if the jar is big enough leave it in the jar (a great way to take it to work with you)

Top it up with your favourite goodies.

If you're not in a rush -

You can also pulse the fruits for topping in a blender and make a layer of smoothie on top of the oats and then top it up with nuts and dried fruits.
